Deruelle Fromagerie
From the outside, you could almost confuse the shop with an interior design store. Inside: soft lighting, modern windows and relaxing music. “The playlist is from Radio Meuh, a radio station from Haute-Savoie, the land of cheeses!” smiles Vincent, employee of this fromagerie that opened nine years ago under Elodie Deruelle. “She works directly with the cheesemakers. Her criteria? The quality of the products and the way they are matured,” he explains.
A local specialty? Escadut, a soft cheese from an organic farm. Its crust is washed in jurancon wine as it matures, giving it a walnut, hazelnut flavor and very soft texture, something like a St Nectaire.

In real life, Madame (and Monsieur) Fromage are called Sylvette and Louis Salbreux. The young couple chose to turn their shared passion for cheese into a career. A real success story, Pascal Beillevaire now sells his cheese in Bordeaux, Paris, and even London!
